A Century of Lever Espresso

Built by the company that helped invent espresso

La Pavoni has been designing lever espresso machines in Italy since 1905. The Professional Lusso carries that lineage forward, a fully manual machine for anyone who wants to master the craft of pulling a proper shot by hand.

The Lever

Espresso, pulled by hand.

Raise the lever and water saturates the coffee under gentle pressure. Lower it, and you drive the shot yourself, controlling the speed, the pressure, the whole extraction. There's no pump doing the work for you. It's just you, the coffee, and the lever, exactly as La Pavoni designed it over a century ago.

The Manometer

Know when it's ready.

A visible pressure gauge sits on the front of the machine, giving you a direct read on the boiler. Paired with the pressurestat and a manual-reset safety thermostat, it's old-school engineering that still does its job perfectly today.

Construction

Built for decades.

Chrome-plated brass boiler and brewing unit, a steel base and lever, Bakelite handles and knobs. Nothing about this machine is built to be replaced in a few years. With basic care, La Pavoni lever machines are known to run for decades, often becoming part of the household.

Know what you're getting

A machine for learning the craft

There's no PID or programmable settings. Temperature is managed the traditional way, and pressure is entirely in your hands via the lever.

Most people take a few weeks of practice to pull consistently good shots. If you want a machine that does the thinking for you, this isn't it. But if you want to actually learn espresso: the pressure, timing, feel of it, this is exactly the machine for that.

No PID or programmable settings. Pressure is controlled manually, by hand, every time.

52mm portafilter, smaller than the modern 58mm standard.

Best suited to one drink at a time, as the boiler needs to rebuild pressure between steaming and brewing.
